Spanish Breakfast La Finca Style

At La Finca we love to put a bit of a twist to traditional recipes.  No more so than Tostada con Tomate, the go to breakfast in every Spanish bar that bears little resemblance, except for some ingredients, to La Finca’s version which has the addition of one of La Finca’s own poached chicken’s egg.

Spanish Breakfast La Finca Style

4 servings

  • 0.5 kg of ripe cherry tomatoes halved – or large tomatoes roughly chopped
  • 2 tbs olive oil
  • 25 gms unsalted butter
  • 2 cloves of garlic finely chopped
  • 1 dsp dried basil
  • Freshly ground salt and pepper
  • 1 dsp fresh basil chopped
  • 4 Soft Poached Eggs (optional)
  • 4 slices of Rustic Olive Bread (or other rustic crusty bread)
  1. Melt the butter in the oil in a medium sized saucepan over a low heat
  2. Add the garlic and cook very gently until soft
  3. Add the tomatoes, cover and cook down until the tomatoes are soft and oozing their juices
  4. Add the dried basil and stir well
  5. Remove the cover and allow the juices to reduce just a little to make a shiny slightly thick sauce
  6. Take off the heat
  7. Season with freshly ground salt and pepper cover and put aside
  8. Serve on slices of Rustic Olive Bread and top with a Soft Poached Egg
